The ragù of "Le MAcchie Alte" are prepared with meat from Maremman cattle and Cinta Senese pigs all bred in liberty within the hundred hectars of pastureland of the estate. They are reared with organic foods free from pesticides and any other chemical or genetically modified substance. Respect for European regulations for organic farms has been certified since 1995 by ICEA. All ingredients come from supervised organic farms including vegetables from our market garden, originating from organic seeds and gathered when fully ripe to maximise the natural flavour given by the sun and the soil. Prepared with Maremman farms women's recieps the sauces are excellent when served with pasta or as a starter on thin slice of tosat (crostini).
